Roquefort AOP and drones: Causses dolines, the ageing cave drones can't enter, prices
Since the law of 26 July 1925 made it the very first French appellation of origin, Roquefort has rested on two radically different grounds: in the open air, the limestone plateaus of the Grands Causses where Lacaune dairy ewes graze extensively; underground, the natural caves dug into the Combalou scree at Roquefort-sur-Soulzon, where the cheese ripens in the draught of the fleurines. A drone has every place on the first ground — and strictly none on the second. Here is what it genuinely brings to a sector of 2,600 farmers, and why the ageing cave will always be this technology's acknowledged blind spot.

A century-old AOP on an extensively grazed plateau
Roquefort gained European recognition as a protected designation of origin in 1996, seventy-one years after the founding 1925 law. The INAO's specifications require raw, whole ewe's milk, almost exclusively from the Lacaune breed (black ewes matching the breed standard are also admitted), fed traditionally on grass, forage and cereals sourced from at least three-quarters of the geographic area, assessed on a dry-matter basis. Ageing and ripening, however, take place exclusively in the commune of Roquefort-sur-Soulzon, in the Aveyron, for a minimum of 90 days from manufacture. Seven approved makers share the designation: Société, Papillon, Gabriel Coulet, Vernières, Fromageries Occitanes, Carles and Le Vieux Berger.
The sector supports around 2,600 dairy sheep farmers and 2,000 dairy employees, for a total output of roughly 15,000 tonnes of cheese a year. The ewes graze the Grands Causses, vast limestone plateaus in the southern Massif Central: part of this territory, "Causses and Cévennes, Mediterranean agro-pastoral Cultural Landscape", has been a UNESCO World Heritage site since 28 June 2011, covering 3,023 km² across the Aveyron, Gard, Hérault and Lozère departments — a recognition that rests precisely on the millennia-long interaction between extensive grazing and a very particular karst relief.
Dolines and shafts: the karst hazard a drone maps
A karstified limestone plateau does not read like an ordinary meadow. Rock dissolution shapes dolines there — closed depressions, often cultivated at the bottom of the hollow — and avens (also called igues or cloups depending on the part of the Causse): vertical shafts or chasms, sometimes hidden by vegetation, that open abruptly within a grazing plot. The lack of surface watercourses also forced generations of farmers to build lavognes (clay-lined watering ponds) and cistern roofs to water the flock — a built landscape that works around the karst relief rather than correcting it.
For a farmer grazing several dozen hectares without constant supervision, a poorly spotted shaft is a real fall risk for a ewe, a quad bike or a trailer. A photogrammetric or LiDAR drone survey, flown once and then updated after any significant rain episode (doline collapse can evolve with erosion), produces a precise map of these cavities to prioritise fencing or marking. A study published in 2024 in Sensors by Juneseok Kim and Ilyoung Hong evaluates exactly this: drone-mounted LiDAR used to delineate and characterise dolines in mountain karst terrain in South Korea (see the study on Google Scholar). The Korean karst studied differs from that of the Causses: this is a transposition of method, not a direct measurement on this terrain — but the principle, mapping in a single flight the depressions invisible from the ground in the middle of a pasture, remains directly applicable.
The ageing cave: the one place a drone will never go
The honesty clause. Roquefort only ripens in the natural caves dug into the rock scree of the Combalou, at Roquefort-sur-Soulzon, ventilated by the fleurines — fissures left by an ancient rockfall, which keep air circulating permanently and maintain a humidity of at least 80% at an average temperature of around 10 °C, winter and summer alike. It is precisely this draught that lets Penicillium roqueforti develop within the cheese paste. This is an environment where no drone belongs: no satellite signal underground, narrow and irregular natural galleries cut for a person to walk through, not a machine, humidity close to saturation that exposes onboard electronics to condensation, and above all a food-hygiene protocol that drastically limits the introduction of any foreign object — dust raised by rotor blades included — into a space where a raw-milk product is maturing.
This is not excessive caution: cave visits, including tourist ones, are done on foot, at walking pace, guided by the ageing houses' own staff. No professional drone use makes sense within that perimeter. The aerial value stops at the surface: the buildings giving access to the caves, their roofs, the fleurine vents visible above ground, and of course the whole grazed plateau overhead. A drone survey documents everything around Roquefort; it will never document the cheese itself while it ripens.
Who commissions this survey, method and 2026 prices
Demand comes from the dairy sheep farmers themselves — often several dozen hectares of Causse, tenanted or owned —, from the appellation's defence syndicate, from the Aveyron chamber of agriculture and from the Grands Causses Regional Nature Park, which manages the UNESCO site, for monitoring the state of the plateau. The typical mission combines an orthophoto and a photogrammetric or LiDAR survey to census dolines and shafts across the grazed area, delivered as a usable map to prioritise fencing or marking.
